#2 Sake Yeast, or Rabbit in the Moon / by Marc Hughes

Yeah, yeah I know…Cloud Antlers was a jackalope, but I had these leftover stickers from the old Jackalope Teeth Milk nigori horchata I made a few years back and no real good access to a printer to make labels. Plus this is how themes are developed (marketing spin).

It didn’t turn out with as high an acidity as I expected. Colorado Sake made a batch with the same yeast recently that was a lot more acidic and had a really nice champagne like quality to it. I felt mine fell a little flat in comparison, until I tired a light carbon filter. This brought out some great pear notes and really brightened it up. It is something I will definitely have to try again in the future.

Because now seems like the perfect time to experiment, some of the #jackalope number 2 #sake got lightly filtered and bottled and the other part is getting charcoal clarified and filtered. We’ll see what happens 😀 #sakeadventure #emeraldmastodon

The charcoal I added to the #sake pushed a pear flower fragrance that I don’t feel was there before. The flavor seems about the same though. #sakeadventure #emeraldmastodon
