In February 2020 I traveled to Katano, Osaka, Japan and was able to pick up a bottle of muroka genshu sake and I was able to extract some yeast from it. Iā€™m not sure what the yeast is, but I believe it to be a combination of #7 and a local yeast.

It is a monster fermenter and very active and adds some really nice peach notes to the nose.
