Sake and Sushi with Cook Street by Marc Hughes

We had a lot of fun last night with our friends over at Cook Street. It was fun actually getting to create the food that was pairing with our sake for the evening's meal. Thanks a lot to our great chefs, Christiano and Michie for all their help and knowledge. It was a fun night of tasting and cooking. Hope to see some of you there next time.

Happy Tuesday! by Marc Hughes

Happy Tuesday Everyone!

Hope your week is starting off great! Ours is going pretty well. We got some great news yesterday that has us super jazzed...our friends over at Sweet Action Ice Cream are making a Colorado Honey Sake Ice Cream with some of our recent pressings. They haven't given us a release date yet, but keep your eye out for sure.

Speaking of pressings, we are currently bottling our recent batch of LSQ and will be restocking spots this week. And if it isn't at your favorite spot, tell them to order it! (or just let us know and we'll work our magic and get it in there)

We would also like to encourage you to head up to Westminster and check out Akihabara - Bar and Arcade. It is a super fun place with Japanese style arcade cabinets (with a rotating stock of games), as well as, fun cosplay parties and game tournaments.

You can also join us at Cook Street on Thursday, March 23rd for a sushi making class and sake tasting. It is a super fun date night or a fun friend night out. Peep the details here.

Hope all is awesome with you and have a great week!

Colorado Fact
The word 'colorado' means 'colored' or 'colored red' in Spanish. The Colorado state was named after the Colorado River, which Spanish explorers named 'Río Colorado' (meaning 'colored river') for the red silt the river carried from the mountains

Sake Fact
There are names for situations where you drink sake. Drink it under a sakura tree during the hanami season and it’s called Hanami Zake (花見酒). Drink it with a Sakazuki during the New Year and it is called Toso (屠蘇). Drink it while admiring the full moon during the autumn and it is called Tsukimi Zake (月見酒). Drink it indoors while watching the snow fall and it is called Yukimi Zake (雪見酒).

Working Hard Through The Holidays by Marc Hughes

Hey folks, sorry for the silence lately. We have been working on a lot of things over the last few months. Still hustling to get our sake on the market and easier for you all to purchase. We've also been working on remodeling our space and building out a new koji room. We've also had a few setbacks that have taken us away from the brewery.

2016 was good to us and we hope 2017 will be even better. Marc is working on bringing back Old Mose (he thinks he found the secret ingredient), and we are revisiting the Jackalope Milk with our friend Izaiah. We've also been working with some artist friends on some new shirt ideas.

Thanks for all your help and support during the last year. It has really meant a lot to us. Have a great holiday season!

Preparing for Sake Day! by Marc Hughes

Some of this year's sake selection

Some of this year's sake selection

We're pretty excited for Sake Day (October 1) this year! Our brewer Marc is breaking out some of the sake he brought back from Takayama, one bottle our good friend Gordon Heady helped make, some sake from our friends at Blue Current Brewery and Ceadar River brewery, and some other odds and ends he's picked up over the last year. He may even share some R&D stuff he's been working on.

Its a great day to do some research and hang with good friends.

Hope to see you there!

Sake Adventures by Marc Hughes

Our brewer Marc is heading off to Japan this week...unfortunately a few days to late to participate in the International Wine Challenge in Hyogo. His travels are part research and part vacation. We're very excited about his visit to Takayama, Denver's sister city. Hopefully he'll bring us back some good news for our Takayama style sake in R&D right now. He'll be taking photos and telling stories, so keep up with him on our Instagram!

Collecting Snow for the Queen by Marc Hughes

After braving all the weather patterns Colorado could throw at us, our team of adventurers braved the trek and returned with some lovely blue snow that our brewer will use to make the next batch of LSQ. In combination with some lovely yamada nishiki rice, we think this will be the best LSQ yet!

Birth of Sake! by Marc Hughes

Thanks to everyone who came out last night! We had a great time sharing our sake along side a great movie. If you haven't seen The Birth of Sake you should.

Thank You!

Thank you to everyone who came out to our first sake tasting at Tengu last month! It was a lot of fun and it was great drinking and learning with all of you. If you didn't make it out, we're planning another one for April 2nd (not a joke) that focuses on sakes from other American breweries. The first featured brewery is Cedar River Brewing Company in Ballard, WA. We had the opportunity to visit the brewery a few years ago, and it is truly some fantastic sake. We can't wait to share it with you.

As for our sake, it is being ferociously worked on right now. We are hoping to have the Queen City of the Plains and El Colorado on the market by May.

We are also in the process of updating our website, so please pardon our mess while we clean it up.

Cut of Your Jib Sake Beer Grandma's House is kegging the beer this week and it should be on tap later on this month...and coming to a local pub, tavern, bar, etc. near you soon!

It Is ON! by Marc Hughes

We Are Ready to Rock!!!

Hey there everyone! We made it through all our legal hurdles and are ready to rock! The next few months will be super crazy around here as we crank up the sake machine to full speed! It will be a few months before we have product on the market, but we are finalizing deals with a few restaurants and liquor stores. We also have a few tasting events in the works. It is very exiting and we are looking forward to bringing you some great sake this year!

Sake Tasting Event at Tengu - February 27 4:30 - 6:30pm Our first event will be this month at Tengu. Join us for an enriching afternoon of sake sampling and Japanese fare. Comfortable for both enthusiasts and those that know nada. $25/person. Space limited. RSVP:bar@tengudenver.com or 303.749.0109.

Cut of Your Jib Sake Beer We have also been in talks with Grandma's House and are putting the Cut of Your Jib into regular production. The next release is in March.

Keep on keeping on by Marc Hughes

DefineYourHustle Well there's some good news and some frustrating news. Good news our labels have been approved! Bad news we have 36 more days to wait after discovering a new permit that we didn't know we needed for the State of Colorado. So hopefully we will be able to start selling in January.

On the other good news side, we have been talking with a few local restaurants about carrying our sake and talks are going well.

We are very thankful and so appreciative of all of you for hanging in there with us during this struggle. Perhaps a Christmas Miracle will be sitting under the tree next week for us.

We are planning a few events next year that we will tell you about soon! Have a great holiday season and a great start to 2016!

Going Quiet for a Bit by Marc Hughes

So what started off as a very simple agreement between ourselves and the State has escalated to a bit of a legal nightmare. So we are going quiet for a while until we can get this all sorted out. Thanks for all the support and we'll see you on the other side of the tunnel. Thanks,

Marc & Keith

Still Hustlin by Marc Hughes

Hey kids! It has been a busy start to the year. We've been stockpiling sake(Queen City, Leadville Snow Queen, and Old Mose), working the legal system, building up the brewing space, trying out a new press idea, fermenting our part of the sake beer for our collaboration with Grandma's House, and reading lots of science books...oh and battling a nasty bug that has been floating around Denver knocking people out for days to weeks. But we're back now and working harder than ever! If all goes as planned (please cross your fingers for us) we will be through all the legal hoops (for this stage) and be able to start selling our sake to bars, restaurants, and liquor stores by the end of May. The direct retail plan is going to take a bit longer to figure out. But baby steps, right?

If you want to help, this petition by some local homebrewers may just let us sell in Grandma's tap room. Take a look at it and if you agree, please sign it.

We're also super excited to start working with local yeast cultivators Inland Island. They are a pair of super smart, super nice gents that will be helping us cultivate some of our successful yeast strains, and work with us to develop a few new ones. Science!
